Blanc de Blanc
This vineyard represents some of the first plantations for vinifera in the region. Ricks, in particular, is a perfect fit for bubbly wines. The vine's trellis system is laid out in such a way that maximizes the canopy of each plant, with extra canes utilized to fill out fruiting zones. The Chardonnay used in this wine is of the Colmar clone. Regardless of how hot the season gets, the wine retains the acidity and structure required for sparkling wine.
The Charmat method was used to create the effervescence in this wine. We have adopted this approach as our go-to technique for producing sparkling wine, as the swift production pace enables us to consistently enhance our methods.
Chardonnay is the ultimate grape variety for bubbly wines, allowing the sparkle to shine through. It also happens to be one of the best vinifera varieties to grow in our region. Even during the coldest winters, when we lose Gewürztraminer and some Riesling, Chardonnay remains unfazed by the cold.
