Description

Tasting Notes

Described as bright with a hint of citrus and minerality, this white wine is as refreshing as it is delicious. A perfect choice to awaken your taste buds.

Vineyard Notes

Michigan's future is full of promise, and our vineyard is no exception. Here, you'll find a diverse range of exciting varieties that will undoubtedly leave a lasting impression. Situated on a plateau with a picturesque view of the Manitou islands, the vineyard's layout and design reflect the most innovative techniques. Additionally, the land's unique shape and location make it possible for the most challenging varieties to flourish despite any obstacles posed by the vintage.

Production Notes

When we harvested this wine, we took a bit of a risk and opted to maximize its varietal character. To achieve this, we crushed the fruit and allowed the juice to soak in the skins in an oxygen-free environment for an extended period. This process helped to infuse the juice with precursors of pleasant aromatic compounds, resulting in a rich and flavorful wine.

Winemaker Notes

Producing Sauvignon Blanc is both a blessing and a curse. It necessitates careful decision-making and is often riddled with doubt. This is because of the intricate nature of its aromatic profile, which is characterized by both pleasant and unpleasant traits. During the winemaking process, we come across both aspects. Our duty is to rely on our intuition and lead this wine in the right direction.

Food Pairing Notes

If you're looking for a wine to complement your herb-driven chicken, tofu, or fish dishes, Sauvignon Blanc is the perfect choice. It also pairs well with herb-driven Asian flavors such as Vietnamese and Thai cuisine.
